Default Moist Zuchini bread recipe

Can you help? We love moist breads and I can't seem to come up with a good one.

This is our very favorite ever. I don't add the raisins or the nuts. But we love it!

Here's the recipe that's been used by my family forever! I sometimes add a cup of roughly diced fresh cranberries for a twist--

Pineapple Zucchini Bread

3 eggs
1 cup vegetable oil
2 cups sugar
2 tsp. vanilla extract
Beat together until foamy.

1 cup well drained crushed pineapple
2 cups shredded zucchini
Stir into egg/oil mixture.

3 cups flour
2 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
1 1/2 tsp. cinnamon
1/4 tsp. nutmeg
1 cup chopped nuts
Stir all dry ingredients together. Then stir gently into wet ingredients until blended.

Bake in 2 greased loaf pans.
350 degrees for one hour

I like to make this in mini loaf pans since there are only two of us here. This recipe will make 6 mini loaves, which I bake for 40 minutes. Freezes very well!

Default Chocolate Zucchini Bread

We love chocolate zucchini bread. Here's my recipe.


1 1/2 cups shredded raw zucchini
1 cup all purpose flour
1/2 cupunsweetened cocoa powder, sifted
1 teaspoon baking soda

1/4 teaspoon baking powder
1/4 teaspoon salt<o></o>
1/2 teaspoon cinnamon
1 small pkg.chocolate instant pudding<o></o>
1/2 cup canola oil<o></o>
1/2 cup granulatedwhite sugar
1/2 cup lightbrown sugar <o></o>
2 large eggs<o></o>
1 teaspoon pure vanilla extract<o></o>
3/4 cup semi-sweetchocolate chips <o></o>


Directions:<o></o>
1. Preheat oven to350 degrees F and place rack in the center of the oven. Grease or spray a large loafpan. Set aside. <o></o>
2. Grate the zucchini, using a medium sizedgrater. Set aside.<o></o>
3. In a large bowl whisk together the flour,cocoa powder, baking soda, baking powder, salt, ground cinnamon, and groundallspice. Set aside.<o></o>
4. In the bowl of your electric mixer beat the oil, sugars, eggs, and vanilla extract until well blended-about 2 minutes. <o></o>
5. Fold in the grated zucchini. <o></o>
6. Add the flourmixture, beating just until combined. Then fold in the chocolate chips. <o></o>
7. Scrape the batter into the prepared pan andbake until the bread has risen and a toothpick inserted in the center comes outclean, about 55 to 65 minutes. <o></o>
8. Place on a wire rack to cool for about 10minutes, then remove the bread from the pan and cool completely. Makesone 9 x 5 x 3 inch loaf.<o></o>

I just made Paula Deans recipe for zucchini bread.It made 3 Loaves 3c. sugar 1c. oil 4 eggs 3 and1/4 c. flour 2tsp.baking soda 1 tsp. salt 1 tsp. cinnamon 2 c. grated zucchini 1 c. nuts 2 tsp vanilla 1/3 c. water and your choice 2 c. chocolate chips Mix in order Do line your pans with parch ment paper or your choice I did not and used spray and will not do that again Bake at 350 for about 50 min.

add 1 20oz. can of drained crushed pineapple to your recipe i do this it works to add moisture
