Default Easy Two Ingredient Pumpkin Muffin

I got this from Sparkpeople, but have heard it originated at Weight Watcher's. Whatever, it is so easy and very good.

Use one box of either Spice or Carrot Cake mix. Add one small (15oz.) can of pumpkin.....NOT pumpkin pie filling. Mix, drop into muffin cups and bake at 350 for 18-22 minutes. I added a cup of raisins to mine cause I like them. Can add nuts too. Calorie count is 120 per muffin.

These are so good with a cup of coffee.....Don't forget that today is National Coffee Day!

If you want a switch, try it with chocolate cake mix too ... especially for those who do not like pumpkin!

Oh yes these are good .. A neighbor gave me that recipe oh some 21 years ago.. I added some calories ..hehee I put frosting on the top .. :-)

QuiltE...I actually used "carrot cake" for mine and yes, I think chocolate would be delicious. I imagine that one could use almost any flavor keeping in mind that the pumpkin would work best with a darker dough because of the color.

Right on!

For another fall cake ... my favourite is the angel cake made with the can of apple pie filling.
Of course for me, I would add more wamr spices, just because I love them.

Sounds good, I would add a cup of chopped walnuts. I honor National Coffee Day everyday. I need something to keep me going.
