Your menu sounds delicious! For an easy salad, sometimes at our house we make "finger salad". It's really just a "relish tray". We don't use dip, but you could offer it. Another easy salad would be a layered salad that needs to be made ahead, so it's great for company. It has cheese in it (protein) and would also be good with bacon or shrimp layered into it. The last time DD and I made it, we put sliced hard-boiled egg on top. I'd be glad to post the recipe if you'd like it.

I wouldn't worry about enough protein just for one meal, I agree with others, your menu is fine and sounds delicious.

I always believe it's not so much about what is on the table as who is in the chair. They'll be delighted someone fixed dinner for them.

There is a good recipe on kraftsfoods.com for creamy chicken spaghetti that is always a hit when I make it. It has Rotel, stir-fry veggies and cream cheese. Quick, easy and good.

Your meal is good. I also have a large and a small quilting group that I meet with. The last time I served a baked potato bar. The ladies enjoyed trying the different toppings for the potatoes. With that I served a relish tray with vegies and a light desert. I alway do a baked potato bar for the neighbors at Christmas and they seem to enjoy it. I always have vegies with it and a variety of Christmas cookies. FUN! FUN! FUN!
We love to entertain and do quite often.
