FRIED POTATO WEDGES

Scrub potatoes and pierce with a fork. Cook on HI in microwave until potato is soft enough to eat as a baked potato....usually about 2 minutes per potato. Remove from microwave carefully (they will be hot)!

Slice in half lengthwise with sharp serrated knife while still hot; cut each half into 3 wedges and fry in hot oil until golden brown on all sides. Drain on paper towels and sprinkle with either plain or seasoned salt.
