Spicy bell peppers & onions
1 1/2 Cup White Onion, Sliced in half moon shape
1 1/2 Cup Green Bell Pepper, sliced thin approximately same size as onion
3-4 Tsp Chili Powder
3-4 Tsp Cumin Powder
Salt & Pepper to taste
Oil for cooking
Water as needed
Optional: Red Pepper Flakes, leftover chopped meats
Prepare the veggies. Heat 2 TBSP oil in a Wok, when hot throw in the peppers and onions. Stir fry for a couple of minutes. Then add the Chili and Cumin Powders and about 2 Tbsp water, stir and let cook Add more spices if you like it with more bite.
Use in: with sour cream, salsa or cheese OR all three. I use leftover potatoes and meat, or cook them up as needed.
Burritos with left over meat chopped, fried potatoes and egg for breakfast, wrapped in lettuce with leftover meat or other vegetable. Add to
I've even put it in the stock of my version of Chicken Cilantro Soup.
This freezes well in cup size portions for later use.
