Gluten Free Chocolate Chip Muffins

I have Celiac Disease and after 5 1/2 years of learning to bake and cook a different way this is my tweeked recipie for
Chocolate Chip Muffins (Gluten Free)

2 1/3 C. Flour Blend
2/3 C. Sugar
2 1/2 t. Baking Pd.
1 1/2 t. xanthan gum
1 t. salt
1 t. unflavored gelatin powder
1/3 c. powdered milk
1 C. Applesauce
1/4 c canola oil
2 large eggs
1 t. vanilla
3/4 c chocolate chips
3/4 c. white chips, or butterscotch chips

Mix all dry ingredients together then add all wet ingredients, blend till moistened,
Gently stir in chips. put into greased or paper lined muffin cups. Bake 400 for 20 - 25 min.

Thanks for the recipe. I am also gluten free and wonder if you might also have a recipe for pie crust and strawberry shortcake?

here are the recipes I use. I would just use a sponge cake recipe for the strawberry shortcake.

My younger sister needs gluten free so when my mom or I make something we use rice flour instead of wheat and all the baked goods taste just like regular. :idea:

My DDIL is celiac and we are always on the look out for new recipes that have been tried by regular people. Have you discovered The Gluten Free Goddess? She has an amazing web site. I just found her recipe for perfect bread. And after many many attempts at all kinds of recipes, this is truly an amazing one. My DIL can actually make a sandwich without toasting the bread.

Yeah, I get regular emails from the Gluten Free Goddess and others. Thank heavens for the internet so we can get good recipes.

Looking for a gluten-free recipe for chocolate chip cookies. Pamela's makes them and you can find them at places that carry specialty and health foods, but they are really expensive.
