Default Grandma's Potatoe Puff

Just in case you forgot; 1 cup left over potatoes
1/2 cup flour
1 t baking powder
1/2 t salt
2 eggs separated
oil

Beat egg yolk till creamy
Add potatoes and mix well
Beat egg whites until stiff
Sift ( or not) flour, salt and baking powder, add to potato mix
Fold in egg whites
Drop by T into hot oil and flatten a little with back of spoon
Serve with hot syrup or left over gravy.

what form are the leftover potatos in? Mashed, sliced...?

We grew up on these things and thought it was just normal to use the leftover potatoes this way. I still make them.

I grew up with these too. I was very surprised at the people that never heard of them or did not know how to make them.

well I'm 60 and never heard of em. maybe we never had leftover taters at our house. 5 kids and always had friends for dinner too.

This recipe sounds yummy. Could you also put into a casserole dish and add a crumb topping?

I wish I'd seen this earlier. I just reheated the last of my Thanksgiving leftover potatoes tonight. Potato pancakes would've been a nice change.
