I have some great green tomato recipes - an Italian friend of mine who lives in Milan Italy passed me a couple of recipes for preserving them in either oil or vinegar - and they are absolutely scrumptious.

I try to make green tomato mincemeat every year for those holiday pies. I'm sure you could find the recipe online but if not, pm me and I'll send a copy.

Here is a link for Green Tomatoe Pie. I sometimes add sliced apples if I have them on hand.

I love fried green tomato sandwiches which are a specialty at Tamarack in Beckley Wv. its a state craft place. The do theirs on a hard roll, thick slices of fried green tomatoes, bacon and swiss cheese, mayo, and lettuce I guess you could even do ripe tomatoes on it if you want. They are really good. Libby
