Default Grilling recipes

We just bought a new grill and I'm wondering if anyone has any tried and true recipes. Seems as if I only know how to fix hamburgers and hotdog.

Beer Can Chicken ---- buy a holder at Lowe's - put 1/2 can of beer in holder - set a whole chicken over beer can after rubbing inside of chicken with oil and I also spray the beer can with Pam - oil outside of chicken and put your favorite rub all over chicken - stuff neck with onion - set on center of grill with back and front burners on low/med. Cook 1 hr and enjoy!! AND everyone will be fighting over that delicious onion :-) (Chicken is "sitting" with beer can in its insides) Chicken does not taste like beer - you can use 7UP also, but we like the beer the best. We use Paprika and brown sugar rub.

RUB RECIPE - 1/4 cup coarse salt (Kosher or Sea)
1/4 cup dark brown sugar
1/4 cup paprika
2 TBLE black pepper

We use this sometimes on pork chops or pork roast

We make this ALOT during the summer, I have done it in the oven also with good results

Pizza On The Grill!!!
We make individual pizzas which makes everyone happy. We use and try several types of flat breads available in all sorts of flavors (garlic, rosemary, onion etc) remember to brush bottom side with a olive oil. I really don't waste time making my own dough since there are so many great flatbreads. We sometimes do the typical sauce, cheese meat etc. and top with homegrown basil, parsely etc.

But the most fun is to use leftovers (allot of times from night before grilled or non-grilled dinner) and create new things. London Broil, Shrimp, Turkey, Chicken, Ham on the flatbreads with summer Tomatoes and vegetables, topped with differant types of cheese like feta etc. and add alfredo, marsala, pesto, tomatoe or any kind of sauce (to keep it light melt any of the several types of Laughing Cow wedges). Plus it is so... good just making a dipping sauce. Add a good salad and it is GREAT!

We usually do not have desert but when we guests--- take 2 soft wraps coat the one with Nutella Chocolate (all over) and top with mini Marshmellows lay the 2nd wrap on top (grill set on low) and toast each side till melted. Put on a hot stone and slice with pizza slicer. This warm with a scoop of Ice Cream-- Yum!!! Now you can mix this up too. Instead of marshmellows put sliced bananas or in season strawberries also you spritz oil on outside and sprinkle cinnimon and sugar and have apple on the inside too. There are so.... many things to create.

Creating on the grill is almost as bad as creating in Quilting World!!!!!

Love the different rubs you get from McCormick, Pampered Chef, etc.
Have marinated london broil in OJ and soy sauce...mmmm

I cut pork loin into thick slices then rub with Louisiana Cajun seasoning in the orange shaker and curry seasoning. Then grill for a few minutes on each side until juice runs clear. Yummy!

Potatoes sliced, onions sliced, zucchini, squash sliced ECt garlic salt and pepper. Put in foil pkgs and put on grill until cooked!!

Have just discovered Cavender's Greek seasoning! Just sprinkle it on fish, chops or steak and grill. It's also delicious on fresh vegetables or potatoes!

Chicken breasts come out great. My DH does the grilling, and I can't say exactly what he does, but I think I just looked them up in a BH&G cookbook and handed it to him one time. You can vary the seasoning, and he always does enough that we can use them for several meals. I love them sliced over a salad or as fajitas or in chicken salad. We freeze any extras and they're quick to thaw in the microwave.

We also love grilled veggies and when peaches are in season, you can slice them in half and grill them on one of those hole-y baskets until they caramelize. Great on ice cream.
