Three mornings/week I do Dance Aerobics and next week I am having this group of women over to my house for coffee and chit chat. They are coming straight from exercise class. I really hate to sabotage everyone's great efforts to stay healthy, but really want to treat them to something yummy. My experience has been that the words "yummy" and "healthy" do not always fit in the same sentence. Can anyone help me out with a tasty recipe for coffee cake that is not filled with empty calories? I really would like to make a yummy coffee cake, but muffins or quick bread would also be a thought.

Don't have a specific recipe in mind, but years ago had one for muffins made with rolled oats and natural applesauce in place of oil. They were really good, and healthy. Try a google search, might be able to find something similar.

Fiber One has some GREAT MUFFIN mixes! The cinnamon one you can turn into a coffee cake! :thumbup: :thumbup: :thumbup:

Maybe brown bread? Have never made this but it looks good. And No Kneeding involved.

I completely forgot about this bread. It is delicious. It would be good with a coffee drink or a smoothie of your choice to. I want some now!!

A box of Devil's Food Cake mix (or, carrot cake), 1 can of pumpkin, 2 tablespoons of applesauce. Mix together, put in muffin tin. Bake 20 minutes @ 400 degrees. I really like these the second day. My friend likes them with cream cheese frosting. This is a Weight Watcher recipe, 2 points, I think.

Yum! This WW recipe sounds like a real keeper. I like the idea of using carrot cake. I doubt that I would frost the muffins. Thanks so much ... everyone ... for your suggestions.

Nita, I entered a muffin recipe that should appear on the next Quilter's Message Board. Hope you will try it, because it is really good! However may not be the healthy recipe you wanted.
