Hearty Meatball Bean Soup

Meatballs
1 1/2 lb of hamburg
1 tsp of salt.
1/4 cup of grated onion
1/4 cup of bread crumbs
1 egg lightly beaten
1/4 cup of tomato juice
1/4 tsp of pepper, marjoram,sweet basin and garlic powder
Combine all ingredients into bite size meatballs.
Brown meatballs but do not over cook.

Soup
1 cup of dried white beans
5 cups of water
1 tsp of salt
1 clove of garlic finely chopped.
1/2 cup each of diced celery,carrots,cabbage and turnip.( I never measure I just throw in what I like)
2 medium onions chopped
4 cups of beef broth
1 28 oz can of tomatoes
1 cup of broken spaghetti or shells or macaroni

Bring beans and water in a large pot to a boil ,boil 2 min and remove from heat.Let stand covered for 1 hour.
Stir fry vegetables in drippings from meatballs 5- 10 min.
Now add this to the beans along with broth and tomatoes.
Cover and simmer 1 hour stirring occasionally. Add spaghetti and meatballs to the soup and simmer another 30 min.
Makes 10 servings.

Now I have been in a hurry and just fried up the hamburg and put the chopped veretables in with the bean after the beans stood for 1 hour and just let it cook and it turned out fine.

Thank you , it is a good soup...you can freeze leftovers too if you wish. I never measure the vegetables as I like a thick soup.Just serve with crusty buns and your good to go. :)

Thanks for posting this recipe., I have decided to make a QB cook book from quilters here. Looks like quilters here are great cooks as well.
