Dh's fav dessert.I use 2 C cooked rice & lots of Cool Whip along with 1tsp of vanilla.
From Cooks.com

HEAVENLY RICE
1 c. cooked rice (cooled)
2 c. miniature marshmallows
1 can crushed pineapple, drained well
1 jar maraschino cherries (cut in quarters)
1 container Cool Whip (thawed)
Mix rice, marshmallows, pineapple and cherries several hours before serving so flavors combine. Shortly before serving, fold in thawed Cool Whip. Garnish top of heavenly rice with maraschino cherry halves.

When I was in home ec class (a very long time ago) we made
this recipe only called it GLORIFIED RICE. We made it to
serve all the teachers,,when asked by the superintendent what it was a classmate responded MORTIFIED
RICE. After we all stopped giggling,, we got kicked out of
class. Needless to say I have not tried it since!
