So we are having Prime Rib for Christmas. (Threr are only 8 of us) Does anyone have any good recipes for side dishes?

We had prime rib on Tuesday night. Rather than a regular baked potato, I boiled the potatoes, with skin on, until just done. Cut potatoes length wise in half, placed in a baking dish skin side down. Brushed with melted butter, sprinkled with a few different spices, little salt and pepper. Topped with grated cheese. Baked until cheese was melted and potates were hot and crusty.
Cut a couple of slits in meat of potato before adding butter.

Everyone enjoyed the different taste.

Yorkshire pudding. Super tasty!!!!

I usually do mine in a muffin tin for individual servings.

Ingredients

* 3/4 cup all-purpose flour
* 1/2 teaspoon salt
* 3 eggs
* 3/4 cup milk
* 1/2 cup pan drippings from roast prime rib of beef

Directions

Preheat the oven to 450 degrees F.

Sift together the flour and salt in a bowl. In another bowl, beat together the eggs and milk until light and foamy. Stir in the dry ingredients just until incorporated. Pour the drippings into a 9-inch pie pan, cast iron skillet, or square baking dish. Put the pan in oven and get the drippings smoking hot. Carefully take the pan out of the oven and pour in the batter. Put the pan back in oven and cook until puffed and dry, 15 to 20 minutes.

Cheesy Hashbrowns (Party Potatoes as we call them)
2 Pound bag of Ore Ida Hash Browns-thawed
1 cup diced onion
1 can Cream of Chicken soup (you can use cream of mushroom)
! 16 0z sour cream
! stick melted butter ( I dont use this, it gets too greasy)
8 oz of grated extra sharp chees.
Mix all and bake 375 in greased baking dish for 1-hour.

We are having scalloped potatoes, green beans, fruit, cranberry jello salad, rolls with our roast and ham...
