If you are comfortable playing around with recipes, try Bisquick's
Impossible pies. We make pumpkin, coconut and many vegetable variations all the time. I use egg whites only and watch the cheese. Very WW friendly!

I'd never thought of impossible dessert pies! My Mom always made an impossible hamburger pie as a main dish.

If you google Impossible pies, you will find pages of recipes.
Here's my basic recipe for vegetables:

3 cups of sauteed or steamed veggies
6 egg whites ( or 3 eggs)
3/4 cup Bisquick
1 1/2 c milk
1 cup of cheese
Combine, bake at 350 degrees for about 45 mins

Yesterday, I steamed some asparagus, defrosted a box of spinach, fried a big shallot; added the spinach & asparagus to the shallot and fried it a bit to get rid of the moisture. Added fresh dill. Put it in2 deep pie pans, coated with Pam spray. Douibled the rest of the ingredients, using fat free milk & packaged cheddar cheese
blend. Poured that on top. 2 gorgeous pies. My son took one home to his apartment. Depending on your cheese & milk, this is 3-4 Weight Watchers points for 1/6 serving.

Play around with the recipe. They all taste great. You can also bake in 9"sq pans.
