Default Jan's Best Salsa - easy, delicious!

Into a blender container pour:

1 can Rotel Mexican tomatoes, lightly drained
1 can Rotel Original tomatoes, lightly drained (or if you aren't a caliente fan, use the Mild)
squeeze in juice of about 1/2 lemon
tablespoon dried cilantro (I prefer fresh, but it isn't always available)
shake of dried garlic
shake of cumin
shake of salt

Pulse quickly just until blended and slightly pureed, but keep mostly chunky

Store in refrigerator up to 10 days.
I use this in guacamole, burritos, nachos, tacos, Mexican eggs, snacking on tortilla chips, even as a salad dressing and on burgers.

Sounds good I'll have to try it. I canned salsa this summer but this would be handy to have something quick on hand.

That is pretty much our favorite salsa recipe too! I have been known to add black beans, chopped onions, white corn, and just a touch of dried ranch dressing mix. Fresh tomatoes in season, too!

Thanks Jan, Wow that sound yummy will be making hubby and i some of it really be nice to sit some out for Superbow Sundayl cause hubby will be glued to the tv i always add salsa to my kettle of chilli also Thanks again (

I have a recipe that I got from a friend. I call it Carol's delicious dip but everywhere I take they call it salsa. Two cans of petite diced tomatoes, 1 small can dice green chilies, 1 small can chopped black olives , 1 bunch green onion ,chopped including lots of the green part, 1-3 T oil (I use 1-1 1/2), generous amounts of salt and pepper. I like it because you can keep everything on hand except the green onions and it tastes good. I serve it with small round tortilla chips or scoops.

I tried this recipe today and it is awesome! I can't wait for my fresh tomatoes this summer to use in this recipe. Thanks for sharing!!
