Default Apple-Pecan-Coconut Muffins

I really have to share this recipe I found and tried. They are really good and easy. I only had 1 apple so I halfed the recipe and I got 9 muffins. The full recipe should make 18 muffins. They were gone so fast..... the guys got into them.

Apple-Pecan-Coconut Muffins
1 1/2 cups all purpose flour
1 1/2 teaspoons baking soda
3/4 teaspoon salt
1/2 teaspoon nutmeg
2 eggs
1 cup granulated sugar
1/3 cup vegetable oil
2 cups finely chopped apples
1 cup chopped pecans
1 cup flaked coconut

Combine the dry ingredients in a large bowl. Beat the eggs in a separate bowl adding sugar and oil. Add egg mixture to flour mixture. Stir just until combined. Add apples, pecans and coconut and stir just until combined.
Fill paper lined muffin cups about 3/4 full. Bake at 305 degrees for 24-30 minutes.
