Default Leftover baked potato?

One way to use a cold leftover baked potato is to make potato salad with it. Just peel (it's easy cold) and dice the potato. In a bowl, mix up some mayo, a small amt of mustard, a little finely chopped onion, sweet pickle, A tsp or 2 of the pickle juice, how much? Just wing it! I did, and it was very good. Just combine everything and add a little salt and pepper. I love potato salad but almost never make it because I can't leave it alone until it's all gone...so I just don't make it. This small size is ideal.

I make potato salad with baked potatoes but I don't peel them. I don't peel potatoes for any potato dish. Sometimes I slice the baked potato into wedges, cover with cheddar cheese, bake until cheese melts.

Great idea. I had never thought of making single-serve potato salad.

I cut mine up (with skins) and put them into a small frying pan with butter or coconut oil. Add onions, peppers, celery and bits of ham or bacon. Maybe add a little milk just before they are done.

I love this idea! Wish there were more of this type "recipe" for singles or two adult households. Seems we throw away too much food or have to eat the same things for 2 or 3 days straight!!

I make hashbrowns or fried potatoes from leftover baked or cooked potatoes, it's just enough for hubby. I'll have to try potatoe salad.

Make a quick casserole with left-over baked potato and left-over meat; hot dogs,hamburger; most anything. A quick and nutritious dish for a lunch with a salad, glass of milk and pudding or some quick dessert. Quick meal; tasty and good!

I have made small servings of potato salad with leftover mashed potatoes. My grandma only made potato salad with mashed potatoes. You just need to be very careful portions when adding, a little can be a lot!
