My DMIL (deceased) used to make her special fruitcake every fall for gifts at Christmas time.

I used to help her, but never got the recipe. She put brewed coffee into it along with the usual flour, sugar, and dried fruits. She would also soak it repeatedly in brandy from Halloween up until a week before Christmas.

Do any of you know of a fruitcake recipe containing coffee?

I know many are not fans of fruitcake, but her's really was good.

I did an exhaustive computer search but didn't find anything.

I believe my aunt used to make a date nut quick bread where she soaked the dates in brewed coffee before adding them to the dry ingred. as I recall it was delicious...thanks for reviving a tasty memory...

I love fruitcake! But, only certain ones. If you really love your MILs recipe and can find it, please post it.
I would LOVE to find a copycat recipe for Harry and Davids fruitcake confection. I've made at least 7 recipes Ive found online, they are okay and some are great on their own, but not the confection recipe.
No one can not like this cake. Almost no batter, just enough to hold itself together. Then just pecans, whole sugar soaked fresh cherries and pineapple for the fruit/nut ingredients. Not even liquer, but it tastes like maybe rum extract cus it has a soaked flavor. Unbelievablely easy to eat ...and eat and eat.

I use a recipe from the "Company's Coming" cakes cookbook. It does not use coffee but I am thinking you could use coffee in place of the fruit juice used in it. My understanding of using coffee is to enhance the flavors of the other ingredients, especially chocolate. I usually do not care for fruitcake but wanted to try making it just to see if I could. Even my friends who do not like fruitcake look forward to getting some every Christmas. It is called Festive Fruitcake and it is spectacular. Not cakelike, just enough batter to bind the fruit together and after it cools I wait a few days and wrap it in cheesecloth and pour brandy over it. I wrap it in foil and pour brandy over it several times then freeze it for Christmas. We have one left from a double batch last Christmas.

This recipe is long but not difficult.

Festive Fruitcake ( Company"s Coming (

I often stir the fruit together the night before with a 1/2 cup of brandy and cover with foil and let soak in overnight stirring a couple of times . I do not add the 1 cup of flour until the next day.

Raisins 4 lbs.
Currants 1 lb.
Candied fruit mix 2 lbs.
Candied Cherries 1 lb.
Jar Maraschino cherries
drained 16 oz.
Dated, chopped 1/2 lb.
All-purpose flour 1 cup

Butter or margarine,
softened 1lb.
Granulated sugar 2 cups
Egg Yolks 12
Crushed Pineapple with
juice 14 oz.
Vanilla 1 Tblsp.

All purpose flour 2 1/4 cups
Baking Powder 1 Tblsp.
Baking Soda 1/2 Tsp.
Salt 1 Tsp.
Cocoa 4 Tsp.
Cinnamon 4 Tsp.
Nutmeg 2 Tsp.
( I also add 1/2 tsp mace and
1 1/2 tsp Allspice)

Fruitjuice such as orange
or apple (or brandy) 1 cup
Walnuts, ( or pecans)
whole or chopped 1 lb.
( I also add 1/4 cup molasses)


Egg whites, room temp. 12

Preheat oven to 275' (140'C). Grease four 9x5x3 loaf pans. Line with brown paper or foil. Grease again
In large container, put first ingredients. Stir to coat with flour.

Cream butter with sugar. Beat in egg yolks, 3 at a time. Stir in pineapple with juice and vanilla.

Measure second amount of flour, baking powder, baking soda, salt, cocoa, cinnamon, nutmeg, mace and allspiceinto bowl. Stir to mix.

Add flour mixture to butter mixture in 3 parts to batter alternately with fruit juice in 2 parts, beginning and ending with
flour mixture. Add nuts.

Beat egg whites until stiff. Fold into batter. Add fruit. Fold in gently. Divide among pans. Smooth tops. Bake in oven about 3 hours until an inserted wooden pick comes out clean. Total weight of 15 lbs.

Thanks everyone for the recipes. I will have to try these...my husband will be the guinea pig because he is the one that really misses his Mom's fruitcake.
