I make this once a week. I cut the oil down to 1/4 cup and I add a small pkg of dry instant banana pudding mix. I cook in a 10x13x3 rectangle cake pan, but it could definitely be
cooked in loaf pans. I don't frost it. It's definitely yummy and moist.

This is the one I use.....I also add a 1/4 cup of applesauce (unsweetened kind)

3 ripe bananas
2 eggs
2 cups flour
3/4 cup sugar
1 teaspoon salt
1 teaspoon baking soda
1/2 cup nut meats, coarsely chopped (usually walnuts)

Mix in a bowl 3 ripe bananas, well mashed, and 2 eggs, beaten until light.

Sift together 2 cups flour, 3/4 cup sugar, 1 teaspoon salt, and 1 teaspoon baking soda.

Add to the first mixture.

Add 1/2 cup nut meats, chopped. Stir well.

Put in a buttered loaf pan 9 by 5 inches.

Bake 1 hour at 350 degrees

Here is my favorite Banana Bread recipe. It has won a lot of ribbons for me at our county fair and also the Indiana State Fair.

MOIST BANANA BREAD

1 1/2 cup granulated sugar
1/2 cup butter or margarine
1/4 teaspoon salt
2 eggs
3 ripe bananas (1 cup) mashed
5 tablespoons sour milk
1 teaspoon soda dissolved in the sour milk
2 cupsflour
1 teaspoon vanilla
1 cup chopped nuts(optional)

Blend sugar, shortening, and salt. Add eggs, then bananas. Add sour milk alternately with flour. Stir in nuts and vanilla. Pour into 1 large or 2 small greased and floured loaf pans. Bake at 350 degrees for 1 hour or until done. Let stand 10 minutes before removing from pans. Finish cooling on wire racks. Store in air-tight container. Freezes well.

Here is the best recipe I have ever found for Banana Bread...

1/3 c. butter softened
1/2 c. sugar
2 eggs
1 3/4 c. flour
1 tsp. baking powder
1/2 tsp.soda
1/2 tsp. salt
1 c. mashed ripe bananas
1/2 c. nuts (optional)

Cream butter and sugar, add eggs one at a time and beat well.
sift tog. dry ingredients,add to creamed mixture alternating with bananas blending well after each addition.
Stir in nuts. Pour into well greased 9x5x3 loaf pan and bake at 350 for45 to 50 min.
I always double this recipe when I make Banana Bread....

One of my go to sites for any recipe is foodgawker.com. You can check it daily or even search for a specific recipe. Put in Banana Bread and you will get all the ones that have been put on Foodgawker.com. You can save the recipe's you like by taping the heart and you have your favorites you can always refer back to. This site is almost as addictive as QB.

My Favorite is called:Jamaican Jungle Bread it is delicious! I don't make it often...cause I can't stop eating it!

Jamaican Jungle Bread
1 1/2 cups all-purpose flour
1 cup 3 Minute Brand Quick Oats (oatmeal that cooks in 1 minute)
1/2 cup granulated sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 cup flaked coconut
1/2 cup chopped nuts (walnuts, almonds or pecans), toasted
1 cup mashed bananas (about 3 medium)
1 (8 oz) can crushed pineapple, undrained
1/4 cup vegetable oil
2 eggs
In large bowl, stir together first nine ingredients. In medium bowl, mix bananas, pineapple, oil and eggs; add all at once to oat mixture. Stir just till liquid is absorbed and mixture is thoroughly moistened (do not overmix).
Pour into greased 9x5x3 inch loaf pan. Bake in a 350 degree oven for 50-55 minutes or until wooden pick inserted in center comes out clean. Cool in pan for 5 minutes. Loosen edges with knife; turn out onto cooling rack. Cool completely. Glaze, if desired. Makes 1 loaf.
Glaze: In small bowl mix together 1/2 cup powdered sugar, 1 tablespoon softened butter or margarine, 1/2 teaspoon coconut or vanilla extract and 1-2 teaspoons of milk. Drizzle over Jamaican Jungle Bread.

Beat Butter, sugar and eggs in a mixing bowl. Add flour, baking powder, salt, and milk, baking soda mixture. Then add banana, and vanilla. Lastly add chopped pecans. Put cake into a cake pan (we always put it in a loaf pan, and it would take forever to cook)
Bake at 350 degrees.

When I was growing up as I said we put it in a loaf pan. However it takes forever to cook this way, and it is better in big cake pan--you know the rectangle 13x9 I think. It has a bit of a crunchy top from the sugars in the cake. Frost if you like, or serve it up as banana nut bread.
