Swedish Fattigmand (Crullers)
6 egg yolks
1 TBSP sugar
1/4 cup cream
1 tsp. vanilla
1/2 tsp salt
about 1 1/2 cups flour added a bit at a time to be able to roll out thin.

Beat eggs.
Add the rest of ingredients
Roll thin to about 1/8 inch thickness.
Cut into diamond shapes, slashing a hole down the center and pulling one corner through the slash.
Cook in hot (365˚F.) grease/fat/lard until brown.
Drain.
When cool, dust with powdered sugar.
NOTE: If you use a scalloped tracing wheel it gives a pretty edge to the cookies.

In Denmark, these are named "poor man's cookies"--and very good for everyone.

i have the recipe if any of these don't work out. i also have the recipe for those "Blue Tin" christmas cookies as well if needed. or look at KING ARTHUR"S cookie cookbook. It has lots of great recipes. The Polish cookies aren't in that one though so PM if you need it.
