Couldn't find the "Recipe" topic area so posted it here. My Kugelis just does not turn out fluffy. Also looking for a good Bacon bun recipe - especially the filling. Any Lithuanians out there that can help me?

Sorry, the combo of the kugel with the bacon buns made me laugh ;-)

Here's a Potato-Zucchini Kugel:

Preheat oven to 375 degrees/ 9" square pan, lightly oiled

Ingredients
4 medium zucchini
2 large potatoes
4 eggs
1 large onion
salt and pepper to taste
Matzo meal (start with 1/2 cup and add more if necessary)
1/2-3/4 cup of oil
1 tsp. baking powder

Peel potatoes . Wash zucchini but do NOT peel.
Mix potatoes, zucchini, onion and eggs in blender and blend quickly.

Pour into bowl and add other ingredients. Matzo meal should be added until mixture is not liquid.

Bake @ 375-400 degrees until top is brown and crisp (about 1hr). Check center with knife or toothpick to make sure it comes out clean.

I sometimes grate the zucchini in for a bit of texture. Make sure you taste the mixture before baking to check for seasoning.

Kugelis and bacon buns were my two favorites growing up and like a dummy - I never had my mom or gram teach me.

as a pure bred Lithuanian on both sides of the family--I have these recipes----Zucchini is NOT in them----I'll look up my Mom's recipes and get back to you in a day or two

Would you mind PMing me the "Pure Bred" recipe as well?

We had something similiar to this that my Belgium Grandmother used to make but it does sound as yummy tasting as your.

Pure bred too! When you find the recipe could I please have it too? I never spent enough time in the kitchen with my mom and grandmother and now I am so sorry. Wish I would have learned the language, too, besides the bad words my uncles taught me.

ditto! lol-
I like the idea of adding the zuchini, though, even if it doesnt start out in the recipe. Just another way to get the veggies into people.
I am interested in ethnic recipes, especially any Eastern European - Im "pure" Polish (both sides go waaaaaay back). My older relatives have died now, and nieces are always asking for "real" Polish recipes, I never learned many from Mom and GM. A lot of recipes from that area in Europe are sort of start the same and then have their regional variations, very interesting. (like cabbage rolls, for example)Sharet
