My hubby and I just recently got a madeleine baking tray for our new apartment.
One of our favorite things to do is to go to starbucks, get a drink and a package each of madeleines.
We thought since we were getting our own apartment, and hubby just got an espresso machine that we would make our own madeleines at home and sit on our patio instead of spending money at starbucks.

Does anyone have a tried and true madeleine recipe?

I am going to have to make a stop at Starbucks and see what a Madeleine is LOL I may have eaten one, but didn't know/remember the name :D:D:D

Here's a delicious one:

French Madelines

4 eggs
1 1/2 cups sugar
1/2 tsp vanilla
1 1/2 cups butter, melted
2 cups flour
1 tsp grated lemon rind

Work eggs & sugar in double boiler until creamy and luke warm. Remove from heat and beat until cool. Add flour gradually, mixing with a wooden spoon. Add melted butter. Add vanilla & grated lemon rind.

Butter & flour molds. Fill 2/3 full. Bake at 350 for 15 - 20 min.

Makes about 48 cookies.

Enjoy.

Oops - forgot to say I dust them with powdered sugar when cool.

Not really. I think lady fingers are a bit "spongy" aren't they? These are a little firmer. But not hard!

These are more like little cakes.

I made some yesterday and they were soooooooooo good!

Almost exactly the same as yours from what I can tell!
They also have a lemon recipe and a cinnamon recipe!
