I have some questions. Is anybody out there familiar with making your own vanilla from vodka and vanilla beans? My question is: all the recipes I have says to leave the vanilla beans in the vodka for at least 6 months. Is or will there be any negative affect if I leave the vanilla beans in for 12 months?

i dont know but i wouldent think so when you make tinctures which is basicly the same proces the longer you leave the herbs in the more potent the tincture is.

It is Ok to use in 6-8 wks. I leave mine in .
You can also use rum for a dark amber color if you give it as gifts...... When you run out. Put Sugar in a special container and put the Vanilla bean in it... Use that sugar for cakes and cookies....

I have made the vanilla sugar before. Hmmm.... I still have some I will have to try it in my tea later. It was great for baking!!
I am thinking of trying to make some homemade vanilla again.
    Thanks!

I had read somewhere that if you leave the bean in there you can keep adding vodka or whatever you're using. So when you use a teaspoon or so add the vodka to replace what was used and let set a few days. I thought about doing this only have 2-3 bottles going at a time.
