Years ago, when I was very broke, on payday I'd buy pounds of hamburger meat. I'd make it into patties, hamburger steak patties, and meatloaf. I'd put the meatloaf into reused pot pie tins. Worked really well then. I could come home, toss a couple in the oven frozen and have a meal quickly with no mess.

I like this idea of individual servings. Easy to serve and save the left overs.

Making meat loaves in muffin tins was in my Betty Crocker children's cookbook in the early 70's. I did it a few times but it was such a mess to clean (we didn't have a dishwasher---except me----when we were growing up) so I stopped. I make them now for calorie and portion control!

Do these for my granddaughter all the time and I top with mashed potatoes some times she likes me to put corn on top of tarters. KIDS LOVE THESE!!!!

I make the meatloaves muffin size, but don't use the muffin tins for this very reason-it's a pain to clean them! It is convenient to grab a couple from the freezer for a quick dinner.
