I made these for a cookie exchange - they're so yummy. I just took my favorite chocolate chip cookie recipe and substituted 1/2 the vanilla for mint extract. Added a few drops of green food coloring and used 1/2 chocolate chips and 1/2 cream de mint (Andes) chips. Here's my recipe:

2 1/4 c. brown sugar (packed)
3 Tbsp. white sugar
1 1/2 c. shortening
3 eggs
1 1/2 tsp. salt
1 1/2 tsp. baking soda
3/4 tsp. vanilla
3/4 tsp. mint extract
3-6 drops green food coloring
3 c. flour
6 oz. semi sweet chocolate chips
6 oz. Andes cream de mint baking chips
Mix all together - Drop spoonfuls on a cookie sheet and bake at 350 degrees for 10 min. These are very chewy chocolate chip cookies! Makes 6-7 dozen cookies. This recipe works well doubled too.
