Default Muffins

Sift together in large bowl:
2 cups all purpose flour
2 tsp. soda
1/2 tsp salt
2 tsp cinnamon
1.25 cups white sugar

Stir in:
2 cups grated carrots
1/2 cup raisins
1/2 cup chopped nuts
1/2 cup coconut
1 apple grated

In second bowl mix:
3 eggs
1 cup vegetable oil
2 tsp vanilla
Stir this into flour mixture. Stir just enough to make everything wet - do NOT overmix. Use paper liners and fill halfway or a tad bit more. Bake 20-25 minutes in 350 oven.

I must go through my high school recipes. i have two of those little metal boxes full of them. there must be some good ones in there. Your muffins sound great except for coconut but then, i've been surprised at eating some things with it in them. thanks.

Leave it out, it won’t matter.

APPLE BREAD/MUFFINS
(absolutely DELICIOUS)

1 cup canola oil ( I use 3/4 cup)
3 eggs--beaten
2 cups sugar
3 cups flour
1/2 tsp salt
1 tsp soda
1 Tbsp vanilla
1 cup chopped nuts ( I use walnuts)
2 cups chopped, peeled apples (can use apples that are getting a bit older)

Mix with wooden spoon!

Bake at 350 degrees:::
Tube pan--- 60-90 minutes
Texas size muffins--- 30 minutes
Regular muffins---20 minutes
