    This makes about 9 3X8 fruitcakes Have your butcher grind 1# fresh porkfat Cover this in a large dishpan with1 pint of very strong hot coffee and stir This will melt the fat. to this add 1 tbl. of soda stir and then let sit for 15 minutes. then add the following 4 cups of brown suger 1# of cut up dates, 1 # nuts, 1# white rasiens, 1# dark raisens, 1# candied mix fruit, a little salt, 1 cup of strawberry jam or any flavor of your choice. Then add the following 1/2 tbl. cinnamon, 2tbl.vanilla,1/2 tbl. nutmeg and 7 1/2 cups of flour. stir very well. Good job for the hubby to help here. You may grease and flour your pans out of this flour and put remaining in with mix. put this in pans and level out. Bake for 1 hr and 15 minutes on 325 in center of oven then drizzel white karo on top and brush out with pastery brush and decorate with some cherries and nuts of your choice. and bake another 15 minutes. Let cool and remove from pans when cool and wrap in seran wrap and then foil. You can make these a month a head of time and keep chilled in fridge. They slice wonderful and taste so good with a hot cup of coffee. This was a old receipe my husbands grandparents passed down they are still very good at the holidays. Enjoy and have a blessed holiday
