Does anyone have good chicken salad recipes you're willing to share? I'm trying to fix meals without having to use the oven -- TOO HOT here in Texas.

I have one that always gets rave reviews from everyone that eats it.

Chicken, either fresh or canned
a couple of boiled eggs
onions (optional)
black pepper
mayonaise to make creamy
pickels (optional)
and the 'secret recipe'.....chopped pecans! After all we are in Texas!!!
Mix all ingredients together and chill.

Chicken, walnuts, green grapes, pineapple tidbits, celery (optional) and mayo or salad dressing. Original recipe from the late 60s called for serving in a pieshell, but I prefer it on a plate with a muffin.

Sassy Chicken Salad......

1 can chicken chunks
1 small can green chilis, chopped
1/2 cup grapes, sliced in half
1/4 cup chopped pecans, toasted
1/2 cup chopped celery

mix together first, then add to above items...
2 tbsp. honey
1/4 cup mayonaise

Delicious! I make it sometimes for my club meetings and my husband loves it, too.

My favorite recipe uses turkey breast, but , you can use chicken of course!
Two breast of turkey or 6 chicken breast
cooked and chopped or diced.
1 cup or more of whipped salad dressing( I use almost 2 cups)
3 Tbsp. of poppy seeds
2 cups of halved grapes
1 cup coarsely chopped, roasted pecans
salt and pepper to taste
Serve on shredded lettuce with mixed tropical fruit and a pickle spear with saltine crackers. YUM!
Going to cook my chicken right now , having this for lunch tomorrow :thumbup:

mayo not miracle whip
season to taste
also pecans

I take chicken and boil it, then I chop it, then I add chopped celery (not too much), then I add seedless green grapes and pecans and Hellmanns mayonnaise. It is called fruited chicken salad.

My DH favorite:
chicken, cubed
Mayo
Sour cream
Chopped pecans
Grapes (cut in half if big)
Pineapple chunks
Mandarin oranges
small dash of curry

5 chicken breasts, cooked, cooled & diced
2 stalks celery, chopped
3 apples, chopped
1 c. red grapes, halved
1/2 c. toasted sliced almonds
2 tbsp. chopped parsley
1 tsp. salt
1/2 tsp. pepper
For dressing, mix together the following:
2 tbsp sugar
2 tbsp white vinegar
2 tbsp sour cream
3/4 c. mayo

Toss dressing mixture into chicken mixture. Cool and enjoy.
