I did this one yesterday in just a little while. Really good and a little different.



Curry Chicken Salad

4 lg. chicken breasts: boiled, drained, diced
1 1/2 cups apple: peeled, diced
1/2 cup celery: chopped
1-1 1/2 cups whote seedless grapes: halved
1 sm. bag sliced almonds: toasted

Sauce:

1 cup Mayo
8 oz. heavy cream
1/4 t. or less Curry powder
2 t. Season All

Pour sauce over chicken, fruit and nut mixture and refrigerate overnight.

To make a good chicken salad sandwich-- purchase croissants rolls-- fill with salad-- wrap in plastic and stick in fridge, the salad soaks into the roll and comes out tasting scrumptious. A little curry adds zing!

I usually just use chicken, celery, sweet relish and mayonnaise.

Sometimes to dress it up, I add crushed pineapple with a bit of the juice.

I use cooked, chopped, chicken breast, Hellman's mayo, chopped up sweet pickles, celery and Craisins.

It's hot here in MI too! I serve this often, always a hit!

Package broccoli slaw (Mann's brand here) in produce dept.
Cooked and cooled coarse cut chicken breast meat
Red grapes
Cashew nuts (I use salted)
Bottled slaw dressing, I use Marzetti's light or a poppy seed

Combine in desired quantities to taste. Chill and serve with a roll or muffin. Popular with women also. Even my husband loves this, and he's a "meat eater"! Enjoy!

1 cup mayonnaise
4 oz cream cheese, softened
6 tablespoons milk
6 cups cooked chicken, diced
1 cup finely diced celery
1 cups grapes, halved or quartered
Pecans, to taste, optional

Blend mayonnaise and cream cheese. Add pecans and mix well. Set aside.

Toss chicken, celery, grapes, and nuts with mayonnaise mixture. Add salt and pepper to taste.

Refrigerate.

Notes:

I usually use 8 oz cream cheese and about 1½ cups mayonnaise, then just add enough extra milk to thin a little.

I always use lots of grapes.

Any of the above recipes made with celery, nuts, grapes and real mayo is a hit around here.

My answer to hot weather is to buy a rotisseried chicken from the grocery store - you know they are fresh because they are made every day and all you have to do is cut up the meat!

I love Curry Chicken salad, but I add more curry powder (about a tsp) and add drained pineapple chunks, sliced banana (added just before serving). Coconut adds a great flavor to it if you have any. I don't use the Season All, just may, milk(cocnut milk is good, but don't add the flaked coconut)and curry powder. Any fruit you have on hand is good

Nice timing, I am making Chicken salad on Friday for our Quilt Club on Saturday Guess I better go get a coule more ingredients. These all sound so good.

my fav, cook a whole chicken on low for a couple hours in 2 tbsp salt and water when you think its done clean it up chop it up while its still warm it will fallapart add half packet good seasons italian dressing ( Dry ) packet chopped celery and add mayo to you taste awesome chicken salad
