Thumbs up Pineapple Casserole Recipe

At a recent jam my husband tasted a Pineapple Casserole.
I checked for recipeas and they vary in the ingredients.
Does anyone have this recipe they wouldn't mind sharing?
Every recipe suggests serving this with ham, which is always a great combination.
I thought this would be great to serve for Xmas dinner.

Here's one that I like to make when we have a ham at Christmas.

Pineapple Casserole

1 stick of butter, melted
4 eggs
1/2 cup sugar
5 slices of bread cut into cubes, no crusts
1 12 or 16 oz. can crushed pineapple, undrained.

Beat the eggs and sugar together, add melted butter. Stir in bread cubes and pineapple.
Pour into a buttered casserole or 12" x 8" oval dish and bake at 350 for 1 hour.
Can be made day ahead and heated in microwave when ready to serve.
Great with ham.

Here is our favorite:

Baked Pineapple

2 (20 oz.) cans pineapple chunks
6 Tablespoons pineapple juice (from can)
6 Tablespoons flour
1-1/2 cups sugar
1 cup shredded cheese (mild or sharp cheddar)
2 cups round butter crackers, crushed
1 stick butter, melted

Combine sugar, juice and flour. Simmer until sugar is partially melted. Stir in pineapple and cheese. Place in casserole, top with crackers and butter. Bake 350 degrees for 20-25 minutes.

We use the pineapple in its own juice. Makes a crunchy crust topping delicious pineapple taste.

The recipe that May in Jersey has given is the one I use. I have had it for years and it is a favorite with the men. It is YUMMY and quick.. you won't be disappointed

Mine is very much the same as "May in Jersey"s except that the melted butter is not added until the end.

Aunt Anne's Pineapple Bread Pudding

3 eggs well beaten w/1 c. sugar
1 #2 can crushed pineapple & juice (med can)
1/4 lb butter.melted
5-7 slices bread - cubed, no crusts

Mix all but butter, letting butter cool after melting before adding.
Bake 350 for 40 mins…….. let sit before serving.

I usually bake and sit on the counter while getting dinner on table and the pudding is warm but not HOT.
Haven't found one person that didn't like this dish and most all ask for the recipe.

BAKED CRUSHED PINEAPPLE

2 eggs, beaten
3/4 cup sugar
2 Tbs. instant tapioca
Cinnamon

Mix all ingredients together, pour into a small casserole
dish, sprinkle with cinnamon. Set dish into a pan of water
about 1" deep. Bake at 350* 45 min. Serve as topping or
side dish with ham.

This is the dish I always serve with ham since I don't glaze it. But my
husband also like this as a dessert.
