I found this recipe on Pinterest so it's not mine, but it's delicious. Gave it to several friends and they love it too. I just changed one thing in it and that was the pan they suggested for it.

Pineapple Cheesecake Dessert

8 oz of soft cream cheese
1 cup of powdered sugar
8-12 oz of Cool Whip
1 cup of very drained crushed pineapple

Beat the cream cheese till fluffy. Add the 1 cup of powdered sugar and mix very well. Stir in the Cool Whip till its mixed. Fold in the crushed pineapple. That's it for the filling.

I spooned mine into a store bought graham cracker crust pie shell, but the recipe says add it to a 9 x 9 sq. pan.

Toast a little coconut if desired and add the coconut and some pineapple tibbits to top. Put in fridge for a few hours. I added the coconut but didn't have any tibbits. My family almost licked the saucers when done.

I have done something like this for several years now. I use my Cherry Delight recipe for the base and then top with my cherries. This weekend I used strawberries. I love pineapple so I might have to give that a try. Thanks.

Thanks for the suggestions about cherries. I know there has to be other choices than pineapple.
