PIROGS

Tried to duplicate Pirogs ordered in a local restaurant ($14.95). Now I can't eat theirs only home made will do now.
In skillet Sauté
1/2 C Chopped Onion,
1 diced chicken breast,
1 Pkg Med shrimp (peeled, deveined and then diced)
Sprinkle in some chopped spinach when chicken is ready
and liquid has cooked out of pan
Add 1 can artichoke hearts - drained & diced (not Marinated)
Add 1 15 oz. jar of Alfredo sauce (I use Classico roasted garlic)
Remove from heat. (Warm mixture will heat sauce enough – continued heating will make sauce too wet)
Cut Pistolettes (or other heavy-ish sandwich rolls) in half lengthwise.
Broil cut side up to crispy Light/Med brown
Remove from broiler and Scoop on mixture (slightly heaping)
Generously top with Shredded Mozzarella Cheese
Broil Again until cheese spot browns and melts.
Slice up as appetizers or add a salad and just dig in.

We call these (Pee-Rogs) or (Pee-Roges) (Which is technically defined as a hollowed out boat)
(Probably not too diabetic friendly – but great kudos to serve to guests as appetizers)
