"3-2-1" (cake for one or more.......)

So simple - even a 4 yr. old can make this:

Take two dry cake mixes (one MUST be angel food, the other can be a chocolate or any other flavor cake mix you like)

In a mixing bowl, dump the two dry mixes into the same bowl. Mix the dry cake mixes together.

Put the two, mixed, dry cake mixes in a ziploc bag.

Now, when you need a little sweet 'kick':

Put the following in a microwave proof coffee cup:

3 tablespoons of the mixed cake mixes

2 tablespoons water

mix together the ingredients in your coffee cup

Place the cup in the microwave for 1 minute.

When done, you can either eat like it is or add a bit of frosting.

I take the dry, mixed cake mixes on camping trips. Works out great for hubby and I for a quick dessert and the grandkids like making their own "cake". :)

Thanks for sharg this. This is great.....I'm planning a trip and am looking for exactly this sort of recipe...I found one on facebook this week using:
One box Angel food cake
One 20 oz. can of crushed pinapple with juice.
Mix and it will begin to foam, put in greased pan and bake at 350 till done.
I have bought ingrediants and plan a test run this week.

I like the idea of yours because you can make a smaller amount.

Slick trick! We can't eat a whole cake for just the two of us, so I will try this and we can have a little treat whenever we want and no stale cake to throw out! Thanks for posting!

Thanks a bunch. I'm making it tonight. My husband thinks he needs desert every night.

The last time I made the angel food and pineapple cake, I added a package of rasberry jello. You could use any flavor, I guess but this turned out great.

quilt1950 04-24-2013 01:36 PM

Thanks. My birthday was recently, and DH made a cake in a 9x13 cake. Much as I love cake, I was ready to be done with it! This makes so much more sense!

You have a microwave when you go camping?

violets4me123 04-24-2013 03:25 PM

Thanks for the recipe. Hubby and I RV and this is perfect for us.
I guess we can tupperware the ingredients to keep fresh, or can I just put in plastic bags and put in fridge? It's only the 2 of us.

Yes. We really 'rough it' when camping, don't we? :)

Mom3 04-24-2013 03:40 PM

Ziploc type bag is what I use - takes up less space in our camper. No need to refrigerate - it's only dry ingredients until you decide to make a 'Cup of Cake". :)

I make the 1,2,3 cake a lot, so easy. I like to put some chopped up peaches and about a Tblsp of the peach juice and it is just like a peach cobbler. Yummy. I have used fruit juice instead of water and it is good too. I try it all different ways.

twinkie 04-25-2013 03:17 AM

That is just great. I love it. Thanks

When I bake a 9x13 cake, I cut it in 4 sections, pop in the freezer until frozen. Then take it out and put each section into a zip lock bag or container, if you have the size. Then back in the freezer. No waste of cake for just two, you don't have to face cake for dessert for a week or more and you can always take out of the freezer at noon, to have dessert for dinner. You can do the same with a layer cake, brownies, etc. I love to section out pie with two pieces to a container, even ones I bring home from the bakery.

This is a Weight Watcher's recipe and is a real winner. I use the angel food cake mixed with another flavor and then proceed as described.....keeps forever in the ziplock for use whenever the mood hits....:)

Cyn 04-25-2013 07:11 AM

Cool idea! Can't wait to try it :) Thanks!

I got this from WW too, remember when it was only 1 point? Bummer, now you have to figure it out by the stats on the box as it can be as high as 5 PP depending on what mix you use.

Hint: I find it is better if you spray the cup with non-stick spray like Pam. Otherwise, it can be kind of sticky.

I mix angel food and ... did you guess it? ... devil's food together. Turn out into a bowl while it's hot, add some Breyers Fat Free Vanilla ice cream on top and YUMMMMMM-OOOOO!

tesspug 04-25-2013 02:03 PM

I put plops of frosting on a cookie sheet and froze them. I keep them in a zip lock in my freezer next to this mix and then I can put one on each mug when I want the cake. Wait until the cake is almost completely cool to add the frosting.

saveaquilt 04-25-2013 02:51 PM

Aerosol whipped cream, need I say more...

AlienQuilter 06-04-2013 06:15 AM

Thanks for the recipe. I just happened to have some Angel Food cake mix and Devil's Food cake mix! What a combo! Do we say it's heavenly or sinfully delicious?

Anyway, I sprayed my mug (cup - not my face) with cooking spray. Then added ingredients. When done I topped with FF cream cheese. Will admit that the cake did look strange but tasted delicious.

One word of advice - make sure your cup/bowl is a lot bigger than the ingredients - it rises really high!

I've used this one. It's easy and delicious!

I keep this ziplock bag ready for those one cup cakes. I bought an extra moist dark chocolate cake mix and an ael food cake mix. I put 5 tablespoons of the cake mixes in a large coffee cup, 3 and half tablespoons of water. Cook for a minute plus 5 seconds, quickly turn it on a plate, a few spoonsful of Cool Whip or pour cream over it. Husband loves it. He takes a ziplock made up to the cabin so he can make one almost every day..Very quick desert.

These are great. My mom always has them on hand for the grand kids when they go to visit.
