Well, actually... :) I have a cool pizza recipe book...are you wanting recipe for CRUST..or the whole thing? I remember that it says feature ONE (or maybe 2) topping(s) when possible...and, of course...CHeese... I will try to remember to bring that book with me on Friday! Are they mini calozones? I made those at Christmas! ;) Have you made homemade pizza crust before now? It is EASIER really than yeast rolls...but hard to get that perfect chewy bite to them! :)

PIZZELLES...not pizza! There's a world of difference. Here's our very favorite recipe. It's a requirement at Christmas. enjoy
3 eggs
1/2 teas. anise (I use more)
1 teas. Baking Powder
1 teas. vanilla
1 3/4 c flour
1/2 C melted and cooled butter
3/4 c sugar and
powdered sugar for decorating
Beat eggs and sugar and add butter, vanilla and anise. Add flour and baking powder and add. Batter will be stiff...drop by spoonfuls. When done, sprinkle with powdered sugar on top. These can also be rolled up like cannoli and filled with ice cream, fruit, etc.

Have you ever been to the website mangiabenepasta.com? They have tons of cookie recipes, including recipes for pizzelle. I love the recipe that calls for butter - the cookies come out very thin and crisp. Also, I use anise oil for my cookies as my MIL did. Usually have to order it online from an Italian grocery, worth the expense, you only need a few drops to flavor the whole batch of cookies. Have fun making those pizzelle !

If you have a good chewy homemade pizza crust recipe, you could post it still!

I also fold them in half (hot off the grill) and insert sayings in them ---like fortune cookies. For quilt guild I use quilters sayings, for showers I put bride to be and groom to be's name, etc.

Pizzelle (Italian waffle cookie) makes 8 delicious dozens

4 1/2 sticks butter, softened

4 1/2 sticks margarine, softened

3 c white sugar

3 c brown sugar

1 tsp baking powder

1 1/2 tsp salt

14 eggs-separated*

1 1/2 tsp vanilla

8 cups flour

Mix butter, margarine, sugars and vanilla. Beat egg yolks and add vanilla. Beat egg whites and fold into above mixture. Bake in waffle maker or pizzelle maker at medium temperature.

* Sorry, Aunt Margaret, but I have quit separating the eggs and I think the pizzelle still tastes fantastic. I just add the eggs to the sugars and beat. You can make your own decision about the eggs!

This might be the best cookie you have ever tasted!

wow, that recipe with 14 eggs must make a boatload of pizzelles.......... I have a pizzelle maker and the recipe that came with it is what I use........don't have it in front of me sorry, but the recipe given earlier sounds close to mine..........love to roll them and fill like a canoli......
