Make your normal scalloped potatoes recipe .... and add in lots of shredded cheddar! (or the cheese of your choice)

If you want a real treat ... add some sliced carrots ... the combo of the starch of the potatoes and the sweetness of teh potatoes ..... mmmmmmmmmmmm delicious!!!!!!

Many years ago, my DMIL told me to make a white sauce and add cheese to our liking. Scary...as I'd never done a white sauce, but used Betty Crocker's medium sauce:
For each cup of sauce:
2 Tbsp butter or margarine
2Tbsp flour
1/4 tsp. salt
1/8 tsp. pepper
1 c milk
Melt butter in saucepan over low heat. Blend in dry ingredients until mixture is smooth and bubbly. Remove from hear and stir in milk. Heat to boiling, stirring constantly at boiling temp. for 1 minute.

Hope this helps!

I peel about 7 or 8 med size potatoes and slice them. Put them in a 13 x 9 casserole dish. Open a can of cream of mushroom soup and put in bowl. Fill the soup can 1/2 of milk and pour in bowl and mix together, then pour over potatoes. Slice Velvetta cheese and place on top of that. Bake at 350 for about 45 mins with foil on top. Remove foil and finish baking until golden brown. Yummy!

This is what I do except I use shredded cheddar cheese.

I like these potatoes for holidays. My orginal recipe called them Party Potatoes.

1 2 lb bag of shredded hash brown potatoes
1 can cream of chicken soup
1 pint sour cream 8 oz shredded cheese

Mix together and put in a baking dish. Bake at 350 for 50 minutes. The original recipe had cornflakes and 1/2 cup melted butter on the top, but I don't like cornflake topping on anything and that's a lot of butter. Can add onion, but not for my crew. My sister and daughter put in a stick of melted butter, but with the cheese and sour cream, I don't.

I do this same recipe but with a couple of changes: I use a soup can full of milk instead of sour cream,
original recipe asks for 1/2 cup butter but I use 1/4 cup & instead of corn flakes, I sprinkle bread crumbs on top but you don't have to put anything. Bake as directed & my family & friends LOVE this dish.

irishrose I use your recipe but I add crushed potato chips on top. Mmm good.

I make those also except I crushed up a small bag of plain potato chips and pour over top and then bake.

I'm making these for Easter dinner this year. Saw the recipe in the paper Sunday and it sounds like a good one. I'll probably double it for a larger casserole.

Cheesy Potato Casserole
1 bag Ore-Ida Country Style hashbrowns
1 can Campbell's Cream of Chicken soup
2 cups sour cream
1/2 tsp salt
2 cups shredded cheddar cheese
1/3 cup sliced green onions
1/4 tsp ground black pepper
2 cups crushed corn flakes
1/4 cup melted butter

Preheat oven to 350 degrees. Coat 13 X 9 baking dish with nonstick cooking spray. Whisk together soup sour cream, salt and pepper. Stir in cheese, onion, and hash browns until well mixed. Spoon into casserole dish. IN a medium bowl, mix corn flakes and butter. Sprinkle evenly on top of potato mixture. Bake uncovwered about 45 minutes, or until hot and bubbly. Allow to rest 5 minutes before serving. Garnish with extra chopped green onions.

Sounded so good to me. I'm tired of the same old hash brown casserole..ready for something a little different.
