I thought I would share a great morning Pancake recipe. we have these from time to time especially when Trevor's 6 year old niece comes for the weekend to stay with us.

chocolate.. the breakfast of champions!

Banana Coconut and Chocolate Chip Pancakes

Sift together:

2 cups flour
4 tsp baking powder
¼ tsp salt
¼ cup sugar

Add
2 cups milk
¼ cup sour cream
2 eggs
4 tbsp melted butter 2 tsp vanilla extract

Whisk together until well combined.

Pour by ¼ cup measures onto a heated and oiled griddle and immediately top with banana slices, chocolate chips and finally a good sprinkle of medium unsweetened coconut.

When bubbles break the surface of the pancakes flip them and cook for another 2-3 minutes or until golden brown. Serve with maple syrup and whipped cream.

(they are also great without cream and syrup) I love them plain.
