Banana Recipes
I have some bananas that are alittle ripe and I would like some more ideas to use them with..I usually make banana bread..need a different recipe for the bread or any other suggestions...

I would peel them and freeze them. Then use them to make smoothies - add one frozen banana, a cup of milk of your choice, and a container of flavored yogurt. Add extra fruit if you wish. The frozen banana makes it nice and thick and cold.
Be sure to peel them first - ask me how I know this!! |

I freeze my bananas with the peel on.
They are very easy to peel with a knife when frozen, may be it depends how hard your freezer is set on I use those in smoothies or in muffins. For the muffins I peel and let defrost may be 1/2 hour Here is my recipe: 3 bananas 1/2 cup sugar 1 Egg 1 teaspoon baking soda 1 teaspoon baking powder 1 1/2 cup flour 1/3 cup melted butter 1/2 teaspoon salt nuts, chocolate chips are optional 1-Mix bananas, sugar and egg 2- Add melted butter 3-Add dry ingredients Cook 20 minutes @ 350-375 degrees 12 muffins - They are the preferred muffins in this house :-) |

I make baked oatmeal with bananas and blueberries, it makes a WONDERFUL breakfast. I got the recipe from a website, can't remember what it was. Try googling baked oatmeal with fruit.

I got a recipe off the radio for pumpkin muffins. Can of pumpkin, one box spice cake mix. Nothing else. But I decided to add a egg to help it a little. Recipe was originally for muffins, 350 for about 25-30 minutes. delicious. So, had some ripe bananas, decided to try them. Mashed them up, added egg to them and made a banana spice cake. 350 for 35-40 minutes.
Have also done it with a can of applesauce, box of spice cake mix and one egg. Used a carrot cake once too. Was pretty good. Can toss in 1/2 cup raisins, or nuts or both. Be creative. I put mine in cake pan, smaller than a 9x13 but not the square one. Can also put in large loaf pan. This is very versitile and good. Try any kind of cake flavor. I prefer Duncan Hines myself. Creme cheese frosting. WOW! But if I put raisins in it, I don't touch it. DH takes care of it. |

After I posted this I did what I suggested to you, the liink for the recipe is http://annies-eats.com/2011/09/12/ I just use the regular recipe from the bag of oatmeal ... and add in whatever fruit I want. Most times, I add some cinnamon too! Then zap it in the microwave. And oh ... I use milk instead of water ... much more creamier and nicer than when just using water. |
I peel the bananas and freeze them 4 in a foodsaver bag.. Pull them out when I want to make Banana bread..

Rockey Pineapple Banana Bread 3 cups flour 2 cups sugar 1 t.cinnamon 3/4 t.salt 1 cup nuts (I prefer pecans) 1 cup coconut Mix dry ingredients in large bowl Combine wet ingredients, & stir into dry Ingredients judt until mixed. 3 ggs 1 cup oil 2 cups mashed bananas, about 4 8 oz.crushed pineapple, Drained 2 t. Vanilla Pour in 2 greased large loaf pans Or 3 small ones Bake 350 degrees 1 hour to 1 hr.15 min. Cool inpans on rack |
