Broccoli Salad Yum

Ingredients:

2 bunches broccoli, florets only (5 to 6 cups florets)
1 medium red onion, chopped
1/2 cup raisins (I used Craisins instead...........the dried Cranberries, more than 1/2 cup)
10 to 12 slices bacon, fried and crumbled ( be sure you fry to crispy so it will crumble)

Dressing:
1 cup mayonnaise ( I used 1/2 cup of yogurt and 1/2 cup of Mayo)
2 tablespoons balsamic vinegar- I added some white vinegar
2 teaspoons sugar

I added a bunch of grapes..... and a lot of sunflower seeds. I didn't measure. You could also add nuts
Preparation:
Separate florets from broccoli stalks. Save the remainder of the broccoli for another use or freeze for later. Combine salad ingredients; top with dressing mixture. Chill and serve.

Enjoy!

I love this recipe but I have never added the grapes and will have to do that. Thanks as this is so good at family dinners and Easter is coming up!

Raspberry vinegarette instead of the vinegar is really good too!

Instead of sugar you can use splenda in the salad.

I like using Parmesan cheese in the dressing, and have been replacing the raisins with plum amazing, the dried plums, they are so yummy

I can eat the whole bowl, it is so good, especially after the flavors have meld. Thanls for reminding me about this one.

I have a similar recipe and it calls for dry roasted peanuts too and some red onion.

Ann L 03-24-2012 11:54 AM

One of my favs as well.

lfstamper 03-24-2012 07:02 PM

It is one of our favorites.

I steam the broccoli until it's half cooked and then drop in ice water to stop the cooking. It seems to make the dressing absorb better and the color is beautiful.

thanks for the recipe

I do this with Sliced Red oinions and then do dried Cherries, but I soak them in water to get them softer... add crumbles picans, and Red bell pepper slices, plus the broccoli, and bacon... yogart for the dressing. steevia for the sugar, now you have a diet salad...
