coconut syrup
 
Has anyone made cocoanut syrup with fresh coconut? If so, would you mind sharing the recipe? I have searched the internet, but haven't found one for fresh. Thanks in advance.

Humbird, I can't help you but do want to thank you. We go to a local Chinese restaurant that has coconut shrimp but not the fried kind with coconut on the shrimp but shrimp in a coconut syrup, which I realized what it was when I read your post yesterday. I have gone online and found tons of syrup recipes and will start trying them out this weekend. Thank you again and good luck on your search.

You are most welcome. The coconut shrimp sounds wonderful! I have found lots of recipeis for syrup, using canned coconut milk etc. Will be doing some, but just happened to have a couple fresh coconuts given to me, so was hoping to use them that way. Thanks for your response.

Funny you should ask. I just made this to serve over raisin/nut pancakes. 1 can coconut milk, 1 cup coconut (I used the packaged kind, didn't have a fresh coconut lying around!), 3/4 cup brown sugar. Bring to a boil in saucepan, lower heat and simmer for 20 minutes. Transfer to blender to puree and it's ready to serve. It was yummy!
