CORNY BANANA OAT BREAD - Lower Carb

This is amazingly good!
Yield 12 slices, 140 calories per slice and 16 carbs per slice when using Xylitol as the sweetener. Most other sweeteners will lower the numbers!

1 1/4 cups whole wheat pastry flour
1/2 cup oats...any kind will do!
1/4 cup cornmeal...yes, I said cornmeal (you don't really taste it, but it gives this bread GREAT texture!)
1/4 cup flaxseed meal (optional)
1/2 tsp ground cinnamon
1 1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1 tsp vital wheat gluten (optional, but it does help with rising)
1/2 cup brown sugar twin (OR 1/2 tsp Stevia powder + 2 TBSP granulated sugar (the sugar is optional, just helps with texture), OR any other sweetener combination)
2 eggs
1/4 cup vegetable oil
1/2 cup unsweetened applesauce (one single-serve container)
1 cup mashed ripe banana (2 to 3, depending on their size)
1 tsp vanilla extract
1/2 cup chopped walnuts

Mix dry ingredients together and set aside. Mix wet ingredients until well blended, then stir in dry ingredients just until well
mixed. Pour into ONE Pam-sprayed 9" loaf pan. Bake at 350º about 45 minutes or until pick inserted into center comes out clean.
Cool before slicing. (Baked goods with sweeteners take less time to bake)

We have a corny oat bread receipe. My hubby loves it and makes it all the time. It is good. I'll have to let him know to try it with stevia next time.

I'm happy to see Sugar Twin used. My hubby used to do the cooking and always used it. can't find in stores here now so i order online. so much cheaper than Equal and others.

I was ordering it online too, but recently found it at our local WinCo Foods. Many of the off-name food store chains carry what won't sell at other stores, so worth checking out. The stuff is not out of date, just things we used to find but have "disappeared" from the shelves.

HINT: ...mixing sweeteners gives a more natural sugar taste!
