Cowboy Caviar

1 can white corn
1 can black beans, rinsed
1 or 2 avocados, chopped
1 tomato, chopped
2/3 c. green onions, chopped
2/3 c. cilantro, chopped
2 cloves garlic, minced
1 tsp cumin
Salt and pepper to taste
1/4 c. olive oil
1/4 c. red wine vinegar

Mix all ingredients and refrigerate until cold and enjoy with your favorite chip.

Great with black-eyed peas too! Beans are so good for you. And economical. Not to mention delicious pretty much any way you prepare them!
