Does anyone here know of a good recipe for a creamy Chipotle soup?
 
I would love to have a recipe for this type of soup. Not heavy with tomatoes though, my digestive system does not tolerate tomatoes. Thanks!

I have a recipe for nacho soup that you could probably add chipotle to and leave out the tomatoes.
I use ground turkey because I don't eat much beef so 1 lb ground meat, browned
I chop up some onion and cook it with the meat
1 1/2 tsp chili powder but you could use more or less
1 can diced tomatoes, drained
1 can black beans, drained
1 can corn, drained
3 cups of either chicken or beef broth
1/4 c flour
1 c half and half
8 oz cheddar, Mexican blend or whatever cheese
Brown the meat and onions
Add vegetables and broth
Blend flour into half and half
Cook to thicken
Add cheese
Stir to dissolve

Thank you, Tesspug, I was doing a search last night and found this very same recipe! Sounds perfect. The only change I will make ... I ordered a tube of Chipotle paste last night also, from Amazon. So I plan to use a little of that. I think a tube of that will last me a long time.
