Easy canning recipes
Here are two of my favorites:
CREAM OF MUSHROOM SOUP
1/3 cup butter
1 pound mushrooms, chopped or sliced
3/4 cup flour
2 quarts meat stock (I use canned chicken stock)
1 T. salt
1 tsp. lemon juice
Melt butter. Add mushrooms and cook until brown. Add meat stock, saving enough to mix with the flour. Make a paste with meat stock and flour. Mix all ingredients and heat until it boils. Put in jars and process in pressure canner for 40 minutes at 10 lb. pressure. When opening to use, add equal amount of milk and soup. Very good! Makes 5 pints. Can be tripled.
When I find mushrooms marked down at the store because the are past the sale by date I buy them for pennies. They are perfect for this recipe. Once you had this soup, you won't buy the canned.

BellaBoo - thanks for sharing these recipes. I didn't realize how easy it would be to can my own mushroom soup.
How do you use the Apple Pie in a Jar? Bake it in a pie crust for how long??? Pour over vanilla ice cream? Apples are very cheap in WA and this recipe sounds like a great way to enjoy apples all winter.
My grandson and I are going to make prickley pear jam this weekend. I have some cactus growing in a spare lot, and it has a lot of "tuna's" as they are called. We have never done it befor but decided to try;
I've been making apple pie filling for almost 25 years. 1 quart works great for pie. Just make like you're using the canned apple or cherry pie filling from the store. I just made apple crisp last night using canned apples. I use 1 qt for a 8-9 inch square pan or 2 quarts for a 9x13 pan. I use any crisp topping that I want for the topping. My family prefers my gma's crisp topping using flour, brown sugar, oatmeal and butter.
Thanks BellaBoo! Sounds perfect!
Thanks as will try these.
Sounds like great recipes.
