Easy Peachy Pork Chops

I made this recipe in the Dutch Oven while camping last summer. I thought I it might be just as good in the oven at home. It was super quick to put together.
[ATTACH=CONFIG]305154[/ATTACH] [ATTACH=CONFIG]305155[/ATTACH] You will need the following ingredients: 4-6 boneless pork loin chops 1 pkg stuffing mix 1 can sliced peaches 2 tsp dried minced onions 2 tsp dijon mustard 1/4 cup apricot preserves Drain the juice from the peaches into a measuring cup and add water to make 1 1/2 cups. Mix the stuffing with seasoning packet and water and stir until most of the water is absorbed. Place stuffing in the bottom of a baking dish. Place the pork chops on top. Combine the apricot preserves, mustard, and onions in a small bowl. Spread over the chops. Arrange the peaches on top. Cover tightly with foil and bake for about 40 minutes (depending upon the thickness of your chops) Peggy |

This does look good, first time I have seen peaches used. What a great idea! Now I hope to try this soon. Thanks for sharing.

I'm going to try this too..... but I don't have apricot preserves, so I will substitute with orange marmalade!!! Thank you!
