Easy Peachy Pork Chops

I made this recipe in the Dutch Oven while camping last summer. I thought I it might be just as good in the oven at home. It was super quick to put together.

You will need the following ingredients:
4-6 boneless pork loin chops
1 pkg stuffing mix
1 can sliced peaches
2 tsp dried minced onions
2 tsp dijon mustard
1/4 cup apricot preserves
Drain the juice from the peaches into a measuring cup and add water to make 1 1/2 cups. Mix the
stuffing with seasoning packet and water and stir until most of the water is absorbed. Place stuffing in the bottom of a baking dish. Place the pork chops on top. Combine the apricot preserves, mustard, and onions in a small bowl. Spread over the chops. Arrange the peaches on top. Cover tightly with foil and bake for about 40 minutes (depending upon the thickness of your chops) Peggy

This does look good, first time I have seen peaches used. What a great idea! Now I hope to try this soon. Thanks for sharing.

350* for 40 minutes

I checked your blog the other day and saw this. Bought some pork chops today to try this out. Looks like a winner to me. Thanks for sharing.

I'm going to try this too..... but I don't have apricot preserves, so I will substitute with orange marmalade!!! Thank you!
