Easy turkey-pasta stir fry
 
This recipe is so easy to make you'll use it as a regular standby or when there are a few extra mouths to feed as it's easy to add more vegetables or ground turkey, an extra serving of pasta, etc. Turkey Pasta Stir Fry is also a beautiful dish to serve to guests with it's wonderful medely of colors.
LOW CARB TURKEY-PASTA STIR FRY

about 2 carbs per serving
4 - 6 Servings

Ingredients:

1 lb Italian Turkey Sausage
4 oz Barilla brand whole grain pasta (cook, drain and set aside)
2-3 cups fresh cut up vegetables such as a combinatioin of broccoli, onion, bell pepper, cabbage & Roma tomatoes
1 clove of garlic or a teaspoon of chopped garlic
1 to 2 tsp chicken bouillion
1/4 cup water

In large frying pan sprayed with Pam cooking spray, cook the turkey sausage until no longer pink. Remove from pan and set aside.
Add a tsp or two of olive oil to frying pan and add onions, bell pepper, cabbage and broccoli. Stir fry until onions, peppers and cabbage are cooked to just fork tender.
Stir in chopped garlic.
Add chicken bouillion and water to vegetables and return cooked turkey to pan and stir. Simmer about two minutes.
Add pre-cooked pasta to pan.
Add cut up Roma tomatoes to pan.
Stir gently and simmer another minute or two to heat through.
Serve with toasted whole wheat garlic bread if desired.
