What's your favorite crockpot or slow cooker recipe?

The only things I make in mine are roast and BBQ ribs.

Roast Chicken
Take one whole chicken, remove the inside stuff.
Wash and pat dry with paper towels.
Spray inside of crock pot with cooking spray.
Rub chicken with olive oil and sprinkle liberally with
Seasoned salt and black pepper. (Could use any seasoning)
Crumple foil to make a rack to rest chicken on.
Place foil in bottom of crock-pot. It keeps chicken from
cooking in it's own juices. Cook on low 8 hrs. Will be moist and juicy roast chicken..just like from deli.

I like to cut up a buffalo roast, stew-sized. Then add chopped onion, rotel tomato, couple sweet potatoes, tomato sauce, garlic, thyme, salt & pepper, cheyenne pepper (optional, also, use non-spicey if prefered on the rotel above), and either beef broth or red wine (I use the wine myself), plus WHATEVER veggies I happen to feel like that day.
After it's cooked for the day I add broccoli at the end.

This is SO easy! I love my crock pot.

Mexican Pork and Beans

Place 1 large can of pinto beans in crock pot.
I add sliced onion, and sometimes fresh green chilies.
Brown pork roast, (I like to use pork tri tip or sirloin) then place on top of beans.
Sprinkle ½ to 1 package of Taco seasoning.
(I generally use hot taco seasoning.)

Cook all day. Serve with tortillas and salsa for burritos.
My husband loves to fry the leftover pork and make carnitas tacos.

Oklahoma Pot Roast
3# or so roast, brown and cut into pieces. Place in slow cooker.
Add 1 package dry onion soup, 1 package dry Italian salad dressing and 1 can of beer.
Cook on high 4 to 5 hours, low 6 to 7 hours. Thicken the gravy if desired.

I think if you would add some sour cream to the gravy, it would be good strougenoff with noodles. I like it with mashed potatoes.

I love my crock pot, one very easy recipe: BBQ chicken take one bag of the frozen ready to cook boneless skinless chicken thighs( you could use breast or fillets) the thighs don't dry out. Add one jar of your favorite BBQ sauce cook on low all day. I put it in at about 0600 and don't get home to eat til 8pm and it's still not dry. And I use a cooking bag so easy clean up. Enjoy

Very easy BBQ

You need a 3-5 lb roast and two bottles of any good BBQ sauce. Cut the roast in big chunks, pour in a bottle of BBQ sauce, stir to coat, and cook on high over night. The next morning, you will have a soupy mess, and that's exactly right. Pour off the liquid, shred the meat however you like it, pour in the second bottle of sauce and stir well. Leave it on high until ready to eat....lunchtime is fine if you do this around 6 AM or it can wait til dinner. My family refers to this as "Idiot Proof BBQ" meaning that I can quilt all day and they still eat!

Italian Beef:
2-3 lb.beef roast (I like to use rump roast)
1 jar medium or hot pepper rings (I use home-canned peppers)
1 onion, sliced or chopped
1 can beer OR 1 cup water
2 envelopes zesty Italian salad dressing mix

Put all in the crock pot and simmer for 6-8 hours or until meat can be easily pulled apart with a fork. Serve plain or as a great sandwich on rolls with the cooling liquid on the side.
