Frozen Peach Salad
 
I received this from my local Quilt Shop.
I'm trying this out this week.

Frozen Peach Salad
1 package (3 oz.) cream cheese, softened
2 tablespoons mayonaise or salad dressing
1 2/3 cups Mini Marshmallows
1 cup (1/2 pint) whipping cream whipped
1 can (16 oz.) sliced peaches, drained
1/2 cup nuts, chopped
1/2 cup maraschino cherries, sliced

Blend softened cream cheese and mayonnaise or salad dressing together until smooth. Fold in whipped cream and marshmallows. Gently fold in fruits and nuts. Spoon into an 8" x 8" square cake pan; freeze until firm. (2-3 hours) Cut into rectangles and serve on lettuce leaves, if desired. Makes 9 servings. Freeze any leftovers.

Oh! That sounds like what my friends and I used to make, many ages ago. . . only it seems ours also had pineapple in it. We put it into those mini-muffin cups, to freeze. I remember it being quite good! :)

wonder if you could use coolwhip instead of "whipping cream"?????that would be my choice

Not having made this, I would say why not? Cool Whip works in most things that whipping cream is used in. Am going to try this out. Sounds good.

I have a similiar recipe that we put into foil cupcake cups and freeze. Once they are frozen, we put them into a ziplock bag. Then we can take out one or more at a time. Makes it real handy. Don't see why that wouldn't work with this yummy sounding recipe!

I have made this same recipe for years except I use crushed pineapple instead of the peaches. I also use cool whip in place of whipping cream. It is delicious.
