Hawaiian Haystacks great for young and old alike

Not actually a Hawaiian recipe but a fun, tasty, easy meal sure to please young and old alike.

3 cups cooked brown rice (about 1/2 cup per person)
3 chicken breasts grilled, sauteed, or boiled, and shredded
2 cans cream of chicken soup
1 can chicken broth
dried parsley and pepper to taste
Suggested toppings:
pineapple tidbits fresh or canned
Mandarin oranges
chopped tomatoes
diced celery
frozen peas thawed
any color bell pepper diced
cooked, chopped brocoli
shredded carrots
diced green onions
shredded coconut
shredded cheddar cheese
cashews, peanuts, or slivered almonds
fresh mushrooms
raisins or craisins
chow mein noodles

Cook the chicken by whichever method you prefer, then shred. Prepare the rice according to the package directions. Chop and dice vegetables, fruits and put in small bowls. I threw my celery in with the chicken to saute and cooked the brocoli in the microwave for a couple of minutes. In a saucepan, combine the soup and chicken broth. Add parsley and pepper to taste. Heat thoroughly whisking until smooth to make the gravy. Add the shredded chicken and stir.


Place a serving of rice and chicken/gravy on each plate, then let your guests add their own toppings according to what they like. Feel free to come up with your own topping ideas. I made this for my grandkids tonight and they devoured it. They thought it was especially fun to choose their own combination of toppings for their dinner. Note: I did make them choose at least one veggie.

That really looks good! I think that kids usually eat better when they have a little say in the matter. Trying to force them never works!

My Haystack recipe add some curry to the soup mixture and Chow Mein Noodles to the add-ons. The noodles add a great crunch.
This recipe is fun to do with a group. Assign different items to your members to bring and you provide the chicken soup and rice part. Everyone wonders what you are going to eat, and then are surprised at the delicious meal.
