Help! Need Tailgate recipe for soccer games!
Hi all.... I need help! I have to come up with some recipes I can take to share after my daughter's college soccer games. I travel 2 hours to games and I am not used to cooking large quantities... so I am feeling kind of clueless! I was looking for a main meal item that might not need to be heated...also some side dishes. I brought pasta salads the first time, but was trying to come up with a few other ideas! Would appreciate any help you can toss my way! Thank you!

I used to be in a similar situation. I would sometimes do sandwiches, I'd buy the small croissants & fill them with turkey & cheese or chicken salad. The croissants were so rich that you didn't need condiments.
Some good salads were Taco Salad or Chinese Chicken Salad. Prepare everything & mix right before serving. I'd make pasta salad with tortellini & add pepperoni, salami, cheeses, black olives & that was always a hit. The girls always loved bean & cheese burritos too. Make them up & keep warm in one of those insulated bags. They didn't need to be hot to eat & they were always a hit (not my favorite, but they loved them!) |
Meatball sandwiches on sub rolls. You could heat up in your crockpot with spaghetti sauce, then pack your crockpot/crockpot insert in an ice chest for travelling. Maybe some shredded mozzarella or grated parmesan, sliced bell peppers and onions for topping

hot foods hot and cold foods cold. What a FUN time these tailgate parties must be, but should someone get sick as a result of what they have eaten, the fun would only be a bitter memory. I hope you can find some ideas that will work ... and yet not create great food safety risks. HAVE FUN!!! |
The only cold main dishes I can think of would be sandwiches or salads.
If you wanted to serve warm dishes, you could always look into getting one of those electric cooler/warmers that plug into your car lighter. (Igloo makes them and probably other brands out there too) Then you can cook your meal at home and transport it warm to the games. |
Potato salad can be pretty filling, too. Use extra eggs and make sure to pack it with cold packs. Serve with saltines or French bread.

I have a wonderful recipe that my son uses for his tailgate parties. It's called Taco Salad. It's very easy to make and it's always a crowd pleaser! Here's the recipe:
Taco Salad 1 1/4 lb. Chop meat head lettuce large tomatoes scallions (green onions) peppers 1 pkg. x sharp shredded cheddar cheese (cubed) 1 sm. bottle catalina dressing 1 package durkee taco mix Bag of nachos (crush them slightly) Cook the ground beef, drain the fat and put it in the bottom of an oblong pan and refrigerate. Cut up all the other ingredients and put in separate baggies. When you're ready to serve, put all the ingredients on top of the cold ground beef, mix and serve. You won;t believe how many people will ask you for the recipe! |
I have the same problem getting a main dish to my family reunion, eventually gave up. Concentrate on what I can make and make lots of those dishes.
Fun and tasty items; Ham and Pickle Roll up Dip-serve with crackers Carrot banana bread with Honey cream cheese spread(Martha Stewart)(cut 1/2 cup AP flour with 1/2 cup whole wheat flour) My bruschetta recipe: one head fresh mozzarella cheese(Sam's club), 1/2 cup (or to taste)- chopped red onion, 2 cloves garlic, 1-chopped, 1- clove put thru the garlic press, 1/4-1/2 cup rough chopped Fresh basil, Combine/coat with balsamaric(sp?) vinegarette (sp):o just before serving, serve with toasted garlic bread slices cut in half. If all else fails stop at the local Walmart for a rotessiere chicken or two. Just remember to take a fork/knife to carve. |
