How Do I freeze Peaches
I don't have many.....a dozen good sized freestone peaches that I would like to freeze for later as we can't eat them all now before they spoil. I really don't know how to do this. Any help will be appreciated...:)

While I never freezed any I have made some delicious pickled peaches for the holidays. They are good for every day but did not have enough.

Blanch them to get the peel off. Slice them up. Use a mixture of sugar and "Fruit Fresh" (available at any store - follow the mixing directions on the label.) Put them in plastic bags and freeze. Easy as pie - peach pie!

I just peel them ,slice them, and just a bit of sugar to get a bit more juice ... put them in a container, or freezer bag. For fast peeling , pour boiling water over the peach , let it set for just a minute( or less) ... till the skin color changes darker and skins just slide right off.
DO get as much of the air out of whatever container you will be using.. thats why I do like the freezer zip lock bags. |

I often freeze extras with the skins on, and then I just toss them into smoothies later.
Of course, depends on what you plan to use them for ... then you may want to slip the skins. Instead of using Fruit Frest .... you can just dump the slices into 7-Up or Sprite (diet or regular). They don't need to sit any time, just so long as they are fully covered with the 7-UP. Then remove and freeze. If you want them to be "singles" you can lay them on a cookie sheet til frozen, then bag. I prefer to lay them flat in a bag, to save the second step later! BTW ... the 7-Up method works perfectly to keep sliced fruit for a fruit tray from going dark! A tip I was given by a professional caterer as to how they prepare the fruit ahead for orders. |
Thank You, ALL. I should receive these jewels this afternoon. I'll freeze them tomorrow. I like the idea of using the ziplock bags......take up much less room in the freezer and once they are packaged, it is done!

I just peel them and put in water with fruit fresh to keep them from turning brown. Then I slice them into a colander to drain good. Put them in quart zipper freezer bags and you'll have enough for a pie. I don't put sugar on them until I'm ready to make the pie. We have scads of them this year. The first tree is done and the white ones will be the next to ripen. Then four or five more trees I will be working on until the last one ripens at the end of September. I'll put away a lotof them this year because it may be several years before we have them again. There aren't any wormy ones either.

I use them in a freezer peach pie recipe that's at allrecipes.com. LOVE it! Basically, you are making the filling for a peach pie and freezing it... Then, in the dreary winter, you have an amazing fresh peach pie. The recipe has worked for me every time - no runniness, perfectly set.

Dito for me, I love making peach cobbler so I save the peal and seed, freeze ot sperate and when I'm ready to make the cobbler I add some water and sugar to the seed and peal and make peach juice out of it. Really delish.

Thanks, Alice. I was wondering what will happen when I peel them. Putting them, all peeled at one time, in a bath of treated water, sounds good. I'm about to do this soon. We just ate a couple with breakfast......Yum! Yum! I think my friend and I are going to go to "peach country" next week and buy a lug to share. These are so much better than any from the grocery store and cheaper,too.....

Peeling them and slicing them into orange juice prevents discoloration. Freeze them in the size container where you will use them all with some OJ. When ready to use just thaw until just unfrozen. They taste like fresh.

That's one thing about peaches, they're only good for a short time! Never tried freezin em!

My FIL used to make what he called "Peach Popstickles". Lay your peaches out on a sheet, single file. When ripe as you like, take and wash them and slice in two pieces (deseeding, of course). Then slice a lemon in half. Rub the lemon slice all over cut side of peaches. Place on cookies sheets in freezer, freeze, then bag in ziplocks or seal-a- meal! When you take one from the freezer, they separate easy, run the peach under cold water. The skin will peal off easily. Then wrap in wax paper and enjoy your FRESH peach popsickle!

I am hungry for peaches upon reading these! Just wish I could get ripe peaches as the grocery stores around here in Oregon. It seems like any I look at are rock hard and if I take home, rot before they get ripe. Any secrets from those of you who grow peaches. I would appreciate any suggestions! I love peaches but bypass them due to this!

My sister grows peaches and is not having a good year. I just stopped by a local farm stand and they don't have ANY, they're looking for a grower to see if they can get a few more before season is completely over. I'm SO disappointed!

I loved all the responses here. I had such grand plans, but, I, too, found a shortage of peaches. We actually ended up eating all we were able to get. However, hopefully, I can freeze some next year. Thank you, everyone, for your suggestions. I shared with a couple friends that live in "peach country" and were able to get a larger amount. They did have to be at the packing houses by 9 a.m. or they were all gone......I live hours away from the packing house and so did not get any. Did get there one day at 10 and they were all gone...:( Didn't have another opportunity to go back earlier.....Next year.....I am warned....LOL!
